Aunt Kim’s Famous Taco Salad
1 family size bag of Nacho Cheese Doritos
2 lbs of ground beef (you can substitute with ground turkey)
1 medium yellow onion (diced)
2 tomatoes (diced)
2 15.5 oz cans low sodium black beans (rinsed and drained)
1 14 oz squeeze sour cream (or any type of sour cream)
1 cup sharp cheddar cheese (shredded)
1 cup colby/monterey jack cheese (shredded)
1 lb bag of shredded iceberg lettuce
3 tbsp of extra virgin olive oil
2 packs of taco seasoning
⅔ cup water
salt and pepper (to taste)
In a large pot, heat oil on medium high.
Saute’ ground beef (or turkey) until brown.
While meat is cooking, drain and rinse black beans.
When meat is brown, add beans and onion.
Season mixture with taco seasoning, salt, and pepper.
Add ⅔ cup of water and simmer for 10 minutes.
In a large bowl, layer the Doritos, meat mixture, cheese, lettuce, tomatoes, sour cream, in that order.
Repeat layers until bowl is full.
